Garlic Thyme Potato Salad Stuffed Tomatoes


  • 2 pounds small red potatoes
  • 2 cups Miracle Whip or Mayo
  • 1 cup sour cream
  • 2 teaspoons yellow mustard
  • 4 tablespoons minced fresh garlic
  • 2 teaspoons ground white pepper
  • 2 tablespoons chopped fresh thyme
  • kosher salt to taste
  • Tomatoes


  1. Peel potatoes and cut into chunks to your desired size and then boil them until tender.
  2. Drain water and place potatoes into a bowl and set aside.
  3. Then in another bowl, whip together Miracle Whip or mayo, sour cream, mustard, garlic, white pepper, thyme, and salt.
  4. Combine potatoes with the whipped mixture until all the potatoes are covered with it.
  5. Cut tomatoes in half and spoon out the insides until hollow.
  6. Then spoon some of the potato salad into each tomato and garnish with more fresh thyme.
