Lemon Blueberry Oatmeal Bread

Lemon Blueberry Oatmeal Bread

Summary: The bread is really moist with oodles of succulent blueberries in it and the texture is sort of a hybrid between that of a cake and a bread. I hope you enjoy it as much as we did!

Lemon Blueberry Oatmeal Bread

  • 1/2 Cup - Oats {blend in food processor to make flour}
  • 1 Cup - All purpose flour
  • 1 1/2 Tsp - Baking powder
  • 1/2 Tsp - Baking soda
  • 1/4 Tsp - Salt
  • 1 1/2 Cup - Plain yogurt
  • 1/4 Cup - Oil
  • 2 - Eggs
  • 3/4 Cup - Sugar
  • 1 Cup - Blueberries
  • 1 1/2 Tsp - Lemon Zest
  • 3 Tsp - Flax seed Powder (optional)
  • 1 Tablespoon - Oats for topping (optional)

  1. Preheat oven to 350 degrees.
  2. Line the baking pan with parchment paper or spray with oil
  3. In a bowl, mix together the oats, oat flour, all purpose flour, baking powder, baking soda, sugar and salt.
  4. Add about 2 tablespoons of this mixture to the blueberries. This is to ensure that the berries don't sink to the bottom of the bread
  5. In the stand mixer bowl, add yogurt, oil and eggs.
  6. Add the dry ingredients to the wet mixture in 3 batches and mix until everything is well incorporated.
  7. Gently fold in the blueberries and lemon zest
  8. Pour batter into the prepared bread pan and sprinkle about 1 tablespoon of oats on top
  9. Bake for 55-60 minutes or until the inserted toothpick comes out clean.
  10. Let cool for 15 minutes then take the bread out of pan; allow it to cool on a cooling rack.
